Cochinita Pipil

This all started with an amazing trip to Playa Mujeres in Mexico. Honeymoon with my amazing wife and we had the opportunity to see the sites. After hiring a private driver to take us to Chinitzen Itza and a beautiful Cenote, he proceeded to take us on an adventure into the wonderful world of true Mayan/Yukatan cooking. We arrived at a small restaurant with the aroma of charcoal smoke coming out of the small building. Walking in you saw grandma on the floor cooking handmade tortillas over the wood smoldering charcoal pit. We had a wonderful meal of Conchitia Pibil with homemade tortillas. We are recreating this meal for a wedding in September and very excited about it. The pictures below show the perfected dish.
