CSB Smoked Chilis
Even though it is tough and time consuming, the flavors we produce at the end are worth every second. I have cooked chili a hundred times, but this was something outside of our comfort zone and a challenge that I wanted to conquer for some time. Happy with the results is a lesser word.
Red chili
Taking the best pasture raised natural beef and combining with CSB Chili Seasonings. Placed on a rack and smoked with hickory and alder wood over a pan of assorted beans, roasted peppers, roasted tomatoes (from our garden), garlic and vegetables. As the seasoned beef cooks, it releases the rendered flavors into this pan until 165 degrees. Once the smoked beef was crumbled and mixed into the bean vegetable mixture, we allowed it to continue absorbing the smokiness for 3 additional hours. Amazingly deep complex flavors and even better topped with the cheddar cheese, lime, CSB vinegar hot sauce and cilantro.
White Bean Chicken Hatch Chili
There are many things that we can talk about immediately with this dish, but it is important to understand that we like take simple things and make them amazing. Part of this dish is smoke whole chickens to pull for the chili. After brining for 24 hours in our seasoned brine we smoke for 5+ hours while maintaining the moisture with apple cider spritz. In my opinion, the best bean is the cannellini, aka the white kidney bean. We use this bean along with a large amount of vegetables, hatch green chiles, and our signature pulled chicken to be combined into a wholesome warm chili. Cornbread is also a must staple with this type setting. Thanks to much better professionals we were provided with the necessary items to produce a great cornbread to soak up both chilis. Something we will continue to use in future endeavors.
